Roasted rainbow carrots on a plate with a toasted sunflower dressing on the side.

Roasted Rainbow Carrots with Sumac, Mint and Toasted Sunflower Dressing

Roasting vegetables whole is one of my favourite techniques I picked up while working at Frenchie bar à vins in Paris. When you roast a vegetable you intensify the flavour and natural sweetness by drying it out and add a beautiful caramelized colour to the exterior. There are endless recipes for roasted vegetables but I’m…

Caesar salad - The King of salads. Rich creamy dressing full of umami flavour and fresh crisp lettuce.

Caesar Salad – The King of Salads

Caesar salad is still today my favourite salad. It has richness from the eggs and oil, sharpness from the delicious parmigiano reggiano cheese and that incredible umami flavour from the anchovies and raw garlic. A caesar salad is the perfect accompaniment to a good steak and great opener to any respectable meal. This is my…

Truffled Deviled Eggs with two glasses of champagne.

Truffled Deviled Eggs

Deviled eggs are an easy sell at a party because most people love them. They take a little work but they’re relatively easy to prepare and you can make them in advance. For New Year’s Eve it’s got to be a little extra special so I’ve added a bit of fresh black truffle. These truffled…

Two glasses of oat milk eggnog with Christmas decorations.

Oat Milk Eggnog

I love traditional eggnog because it’s comforting, tastes like Christmas and the perfect excuse to drink rum during daylight hours. But normal eggnog is heavy and because I’m lactose intolerant, not my number one holiday choice. I experimented with a few variations to find something lighter, dairy free and preferably with my favourite non-dairy milk…

Roasted Kabocha Squash with Cardamom-infused oil on the side.

Roasted Kabocha Squash with Cardamom-Infused Oil

Cardamom is one of my favourite spices because of it’s delicate but rich flavour. The combination of this unique spice works really well with the roasted kabocha squash. Most people are familiar with butternut squash but I actually prefer kabocha squash with its chestnut flavours and deliciously soft texture. This recipe was originally cooked sous…

Sticky toffee pudding on a plate with salted caramel sauce drizzling over top.

Salted Caramel Sticky Toffee Pudding

When I think of Christmas the first thing that comes to mind is this unbelievably good dessert. And if you’re British like my grandmother you already know the deal. STP is super soft, moist and ideally drowned in a delicious, rich caramel sauce. I’ve changed this recipe slightly to include a salted caramel sauce which…

Marmite and chili chicken wings on a plate.

Umami Loaded Marmite and Chili Baked Chicken Wings

I discovered this wild combination through experimenting one night while trying to make my baked chicken wings a little more interesting. The result was surprisingly delicious – salty, sticky, sweet with an incredible umami punch. The best part is that they’re pretty easy to make and there’s no need for a deep-fryer this time as…

Bitterballen on a plate with mustard and toothpicks on the side.

Bitterballen – Dutch Secrets Exposed

I don’t trust people who say they don’t like bitterballen. They’re just too good to turn down. Crispy golden brown on the outside and stuffed with mouth-watering braised beef make these the ultimate snack to munch on while sipping a frosty beer. Where are those people that say Dutch food sucks now? I guess they’ve never…

Taco’s best friend is probably guacamole but pico de gallo is definitely in the friend circle. Loaded with fresh tomatoes, chili peppers and herbs, this salsa is the ultimate fresh juiciness you want in your taco. Here’s a solid recipe for a pico de gallo salsa that doesn’t disappoint. What is it? It’s a raw…

Green onion chimichurri with a steak and a pan of butter on the side.

Green Onion Chimichurri – A Healthy Steak Sauce

What is the BEST steak sauce? There are loads of options for steak sauces including béarnaise, demi-glace, peppercorn sauce, Diane sauce and salsa verde to name a few. My favourite steak sauce will always be a proper demi-glace jus but this is difficult and time-consuming to make at home. At home, I want something light,…

Watermelon Granita with fresh watermelon slices on the side.

Vodka Watermelon & Basil Granita – Heat Wave Treats

This vodka watermelon granita is so refreshing you might actually forget about climate change and how hot it is right now. It’s a sizzling 35ºC of death right now in Maastricht with a very unsympathetic hot sun shining over the past week. The solution? Staying in the shade and eating cold things from the freezer.…
